I remember my sisters and me making these for dinner when we were kids. This is an old Reader’s Digest Recipe – we can only really take credit for finding and trying it. Definitely a favourite & just as yummy as I remember!
2 cups all purpose flour
½ cup sugar
1 tsp baking powder
1 tsp salt
½ tsp baking soda
1 ½ cups shredded cheddar cheese
1 cup plain yogurt
¼ cup butter
2 eggs, beaten
Mix dry ingredients together and wet ingredients together in separate bowls. Add the wet ingredients all at once to the dry ingredients and stir only until moistened. Makes 12 muffins. Bake at 400 degrees for 18-20 minutes.

I add chilies to mine sometime, which my husband loves. Other times I add fresh herbs for a softer version: basil, rosemary, or chives work well depending on what else I’m cooking.
