An all around comfort food. Eat it while you’re healthy, eat it while you’re sick. You won’t be disappointed.
Ingredients:
4 chicken thighs, diced
2 medium onions, diced
2 cloves garlic, minced
3 celery stalks, diced
2 carrots, peeled and diced
2 900ml tetra pak chicken stock
3 cups of water
3 cups spinach, chopped
1 tbsp dried basil
black pepper, to taste
1 cup orzo
olive oil

Method:
Saute onions, garlic, celery and carrots in stock pot with olive oil until soft. At the same time, saute the chicken thighs until cooked thoroughly. Add chicken stock, water, spinach, basil, black pepper and water to the sauteed vegetables. Add chicken. Bring to a low boil for approximately 10 minutes and add orzo. Leave at a low boil for approximately 15 mins, until orzo is soft.
