Yogurt Banana Muffins


I experimented tonight and came up with this little tasty guilt-free treat!

Ingredients:

3 ripe bananas, mashed
2 lg eggs
1/4 cup apple sauce (unsweetened)
1/4 cup miracle whip (fat free)
1/2 cup fat free plain Liberte Greek yogurt
2 tsp pure vanilla extract
1 ½ cups Nutri flour (Robin Hood)
3/4 cup white sugar
1 tsp baking soda

Method:
Mix mashed bananas with oil, eggs, yogurt, sugar and vanilla until well combined. Mix in the flours, soda and salt and mix until just blended and no flour remains. Spoon into 12 prepared cupcake tins and bake at 350 for 20 minutes, or until knife comes out clean when poked.
