Inspired by a strata that I saw on ABC’s The Chew, I came up with this healthier version.
Ingredients:
4 hot Italian turkey sausages, prebaked and sliced
¾ cup frozen chopped spinach, thawed & drained
1 tsp sunflower oil
1 tsp crushed red pepper flakes
salt & pepper, dash of each
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
1 small onion, diced
2 cloves garlic, minced
¼ cup parmesan cheese
14 large eggs
2 ½ cups skim milk
½ loaf whole wheat bread, cubed
Method:
In a frying pan, fry the onion, garlic, and peppers with chili flakes and salt & pepper until the onions are translucent, add the spinach. Beat the eggs and milk in a bowl then add the parmesan cheese. Soak the bread cubes in the egg mixture. Add the ingredients in the frying pan and sliced sausage to the egg mixture and combine. Bake in a slightly greased 9×13 glass pan for approximate 45 mins at 350 degrees.
Top with more cheese!

This picture looks *really* yellow. I used more than 1tsp of sunflower oil… maybe 1T? It was delish and I’ll def make it again!
I think bacon, leek and cheddar might be a nice substitution for the sausage, peppers and Parmesan… I’ll have to try that too.
