1 cup granulated sugar
1/3 cup water
1/4 tsp cream of tartar
2 unbeated egg whites
1 tsp vanilla
Combine sugar, water, cream of tartar, and salt in saucepan.
Bring to boiling, stirring until sugar dissolves.
Very slowly add to unbeaten egg whites in mixing bowl, beating constantly with electric mixer until stiff peaks form.
Beat in vanilla.
Frost tips and sides of two 8″ by 9″ layers, or 10″ tube cake.
