Stoofvlees (Belgian Stewed Beef)


Don’t let the unpronounceable name of this recipe scare you; it’s truly a delicious way to prepare beef.

Ingredients (4 persons):

– 1 kg stewing beef
– 2 onions
– 2 garlic cloves
– 50 cl gueuze (or other dark beer — don’t cheap out)
– 1 tablespoon brown sugar (cassonade)
– salt, pepper
– 1 bay leaf, 1 small branch of thyme, 1 clove
– a little mustard
– butter
Preparation of the casserole:
Let the butter melt in a ‘dutch oven’ on the stove and fry the beef and onions.
Season with salt and pepper.
Add the thyme and bay leaves, cloves, the brown sugar, mustard, and garlic.
Mix until the stew becomes browned.
Reduce heat and add the beer.
Cover and let simmer for as long as possible (+ / – 75 minutes)
Serve with fries and a beer.
