Thought I’d try a “healthier” take on regular old mac and cheese, and came up with this creamy, three-cheese spinach main course dish. I’m not sure its even a tad healthier, but at least you’ll get your greens.
Ingredients:
450g rotini
1 tbsp olive oil
1 small onion, minced
1 tsp garlic, minced
2 1/2 cups mix of cheddar and swiss cheese, shredded
1/2 cup mozzarella, shredded
1/2 cup plain Greek yogurt
1/2 cup hot water
1/2 cup milk
8oz fresh spinach, chopped
Lots of fresh ground pepper
Method:
Cook rotini as per directions on the package.
Saute onion and garlic in olive oil.
When the pasta is finished cooking, strain and immediately add spinach and cheese. Spinach will wilt and the cheese will melt into the pasta together. Add hot water and milk to make the cheese creamier. Mix in yogurt. Keep it warm until you serve it!
I used a mix of cheddar, mozz, and swiss because that’s what I had in the house, but you can try it with any cheese.
Excellent main or side dish.
