Jen’s Pumpkin Muffins


2 1/2 C all purpose flour
1/2 C rolled oats
2 t cinnamon
1 t nutmeg
1/2 t allspice
2 t baking soda
1 t baking powder
1 t salt
1 1/2 C pumpkin puree
1 C brown sugar
1 cup white sugar
2/3 C vegetable oil
1/2 C apple sauce
3 eggs
1 t vanilla
Streusel Topping:
1/2 C packed brown sugar
4 T butter
4 T rolled oats
4 T all purpose flour
1/4 C chopped pecans
Preheat oven to 350 degrees.
Combine flour, oats, spice, baking soda/powder and salt together in a bowl.    Whisk pumpkin puree, sugar, oil, apple sauce, eggs and vanilla together in a separate bowl.  Fold in flour mixture.
Melt butter for streusel topping and combine ingredients.
Pour batter into lined muffin tins and top with approx 1 t of streusel topping.
Bake for approx 18-22 mins or until toothpick comes out clean from centre of muffin.
Note: t = teaspoon and T = tablespoon

    I got lazy tonight and made one dozen muffins a a threw the rest in a loaf pan with the streusel and baked it for 45mins at 350°. Delicious.
