Creamy Smoked Salmon Pasta

This is my Dad’s recipe, I can’t take the credit. Its a simple and delicious meal that is very healthy and quick enough for a weeknight.

2 large onions, sliced very thin
2 tbsp olive oil
2 cloves garlic, minced
4 cups fresh spinach
2 cups sour cream (we use fat free)
2 tbsp cream cheese
12 oz. salmon (either smoked salmon or fresh salmon, already grilled)
pepper to taste

Carmelize onions and garlic in olive oil. Add spinach and cook until wilted. Turn heat down, let sit for approx 5 mins, and add sour cream and cream cheese. Slowly add more heat to the now creamy sauce, then add the salmon.  Heat thoroughly and add pepper to taste. Serve over favourite kind of pasta.
