Crustless Salmon & Spinach Quiche


Ingredients:

1 can red salmon
10 eggs
2/3 cup  milk
2 cups packed fresh spinach, chopped
8 large mushrooms, finely chopped
1/2 onion, finely chopped

Method:

Preheat oven to 350 degrees. Sauteed the onion using cooking spray. Combine all ingredients in a oven safe dish except the eggs and milk. Beat eggs and milk together with a fork and pour into the other ingredients, stir together. Sprinkle with parsley and fresh ground pepper. Bake until firm – when a knife pulls out clean, approximately 55 minutes.

We topped it with cheddar and served fresh pumpernickel bread. Excellent combination.
