Ingredients:
2 tbsp extra virgin olive oil
1 large onion, chopped
salt & pepper, to taste
2 tsp crushed red pepper flakes
3 celery ribs, chopped
3 carrots, chopped
4 cloves garlic, minced
1 large potato, chopped
2 tsp curry powder
1 tsp cumin
2 cups dry red lentils
2.5 cups beef, cubed
1 cup low sodium beef broth
2 cups diced canned tomatoes, with juice
8 cups water
hot sauce, to taste
Method:
Heat olive oil, add onions, crushed pepper flakes, salt & pepper, celery, and carrots. Sautee until onions are soft (5-7 mins). Transfer to crockpot, add all other ingredients. Cook on low for 8 hours (great for overnight or during the day).
