Chai Tea a la Jen

  • 10 whole green cardamom pods, lightly crushed
  • 5 whole cloves
  • 2 cinnamon sticks
  • 1 piece fresh ginger (about 2 inches), peeled and quartered
  • 1 vanilla bean, split lengthwise and scraped
  • 1/3 cup honey, plus more for serving
  • 4 bags black tea
  • 1 1/2 cups  1% milk
  • Add: Cardamom, cloves, cinnamon, ginger and vanilla bean and scrapings to 3 cups of water in a saucepan.  Bring to a boil. Reduce temp and simmer for about 15 mins.  Add honey and drop in tea bags.  Turn off heat and let steep three mins.
    Strain tea (can use a coffee filter)  and return to saucepan.  Add milk and heat again (do not boil).
