Jean’s Favourite Christmas Figgy Pudding


A traditional Christmas favourite that is much easier to make than fruit cake.

Ingredients:

12 to 14 dried figs (= ½ pound or approximately 1 cup)

1 ½ cups fluffy bread crumbs (= 2 slices bread)

1 cup walnuts, chopped (or pecans or almonds)

1 cup brown sugar

¾ cup raisins (or candied peel or other fruit)

3 Tbsp. melted butter

2 eggs beaten

½ cup skim milk

½ tsp cinnamon

¼ tsp. nutmeg

Method:

Cut the dried figs into pieces with scissors and then mix with the fluffy crumbs.

Add the nuts, and all of the other ingredients and mix well.

Put into a greased baking dish or mold and decorate the top with several Maraschino cherries.

Cover the top with aluminum foil, set the mold in a pan of water and bake at 325 ˚F for 1 hour or longer if necessary.

Serve with Grandma’s butterscotch sauce and vanilla ice cream or frozen whipped topping.
