Squash Fritters


Stacey sent this recipe today with a note to quickly add it to the blog because people are asking for the recipe. Relatively simple, and a great way to get in your veggies.

Ingredients:squash 2

3 cups squash grate

1/2 teaspoon all spice

1/2 teaspoon cinnamon

2 large eggs

1/2 cup oat flour (also can use all purpose flour)

Olive Oil for frying, use a non-stick pan to reduce oil needed

Add ingredients to bowl. Stir until combined. Fry in heated non-stick pan, medium heat. Flip when brown. Easy to reheat in oven using grill.

Yield: About 10-12 fritters

To serve (optional)
1/3 cup sour cream combined with 1/3 cup goat’s cheese

Sprinkle on top: 3 tablespoons pomegranate seeds and 2 tablespoons toasted hazelnuts coarsely chopped (as shown in picture).
