I wanted to make stromboli but didn’t have yeast for the dough in the house. Whipped this together – inspired by Impossible Cheeseburger Pie. Easy week night meal. Delicious. Nutritious.
1 lb lean ground beef
1 onion, diced
2 cloves garlic, minced
1 red pepper, diced
1/2 package of taco seasoning (fajita or burrito would also work)
1 can kidney beans, crushed
1 1/2 cups salsa
1 3/4 cups milk
1 cup Bisquick
2 cups shredded cheese – preferably Monterey Jack
Brown ground beef, drain. Add seasoning, garlic, onions and peppers and cook until they’re tender. Mix in crushed kidney beans and salsa. I threw in some hot pepper flakes to bring up the heat. Lay in bottom of 9×13 inch pan. Set aside.
In a separate bowl, mix together Bisquick, eggs, and milk.
Put half the grated cheese over the mixture in the pan, and then add the Bisquick mixture. The rest of the cheese goes on top.
Bake at 350 degrees until the top is golden brown (approx 30 minutes).
Excellent served with sour cream, hot peppers, and more salsa.
