Honey Bran Muffins


Definitely a family favourite. Found on a tattered little piece of paper in Mom’s recipe box. Liquefying my honey to make them tonight.

1 c. buttermilk (or 1c. milk + 1 tbsp lemon juice or vinegar)
1 egg
1/3 c. vegetable oil
1/4 c. liquid honey
1 1/2 c. 100% bran cereal
1 1/2 c. all purpose flour
1/4 c. firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon

Mix the wet ingredients, then stir in the dry ingredients. Bake at 400 degrees for 15-20 minutes in either papered or greased muffin tins.

Enjoy with peanut butter, honey or cheese!
