Grandma’s Caramel Corn


Mom remembers Grandma making this every Saturday night for the family to eat while watching the hockey game.

Ingredients:

1 cup popcorn or 3 bags microwave popcorn, popped

1 cup butter or margarine

2 cups packed brown sugar

1/2 cup corn syrup

1 tsp salt

1/2 tsp vanilla

1 tsp baking soda

Cashews, peanuts and other mixed nuts, if desired

Methods:

Pop the corn. Butter a large roasting pan; put popcorn in pan. In a large saucepan, combine butter (or margarine), brown sugar, corn syrup and salt; bring to a boil, stirring constantly. Once mixture comes to a boil, reduce heat; cook 5 minutes. Do not stir. Remove from heat; add vanilla and baking soda (you can stir now). Mix syrup with popcorn and nuts; bake in 250 F oven (no hotter) for 1 hour, stirring every 15 minutes.
