Spicy Lentil Chicken Stew


Ingredients:

6 skinless, boneless chicken breasts

2 carrots, chopped

1 pepper (red, green or yellow), chopped

1 large onion, chopped finely

28 oz can diced tomatoes, drained

7 cloves crushed garlic

1 1/2 cup red lentils

4 cups chicken broth, low sodium

2 cups water

2 tsp ground cumin

1 1/2 tsp salt

1 tbsp crushed red pepper flakes

Method:

Throw all ingredients in a slow cooker on high for 8-10 hours. When finished, break up chicken to mix throughout stew.
