Ingredients:
2.2kg (5 lbs) pork loin roast
3 tbsp flour
2 tsp ground ginger
1/4 tsp granulated garlic
1 tsp dried sage
1/3 cup apricot jam
1 1/4 tsp hot pepper sauce
Method:
Mix together flour and spices and then coat roast. Place roast on foil covered baking pan. Place a piece of foil loosely over top of the roast and put into 325°F oven for 2 hours or until just done. Mix together apricot jam and pepper sauce and spread on top of roast for last 20-30 minutes.
