Ingredients:
1 lb extra lean ground beef
1 onion, chopped finely
1 red pepper chopped fine
2 cups medium salsa
1 large can of kidney beans, drained & rinsed – one half reserved and mashed
2 packages of pillsbury pizza dough
2 cups shredded Monterey jack cheese.
Method:
Brown ground beef, add other ingredients. Simmer ’til veggies are cooked and mixture appears thick enough to spoon out of frying pan.
Unroll pizza dough onto a lightly greased pan sprinkled with corn meal. Sprinkle with 1 cup of cheese. Add half meat mixture. Fold up dough. Repeat with 2nd pizza dough. Bake at 350º for 25-30 mins or until golden brown.

This is one of my favourite things to make for a party.
I like to add more peppers and a can of corn. I also like to spice the beef with chilli powder and garlic.
If you can’t get Pilsbury pizza dough, you can use the crescent rolls unrolled as one large piece. I’ve also used puff pastries and made individual sized portions.
Just finished serving this… next time I will add more cheese. Also, I completely forgot about the garlic.
Serve with more salsa and sour cream.
i made this tonight. i spiced the meat with cumin and coriander powder. i also added 3 cloves of garlic (minced) and a generous amount of ginger root (minced). i didn’t have any pizza dough in the house, so i made it up with pie crust. it was a resounding success.
