Caramel Ice Cream Cake

Ingredients:

1 c. flour

1/4 c. oatmeal (quick)

1/4 c. brown sugar

1/2 c. butter

1/2 c. nuts

1 qt. vanilla ice cream – 4 cups (get the “box” of ice cream)

1 (12 oz.) jar caramel topping (the PC Dulce Cream stuff is perfect for this! You can find it in baking stuff with chocolate sauce or with ice cream toppings)

Directions:

Mix together. Put in 9×9 pan. Bake 15 minutes at 400°F. Stir up and crumble while warm. Take 1/2 crumbs and press in bottom of pan.

Drizzle 1/2 of caramel topping over crumbs – heat it in the microwave … makes it easier to spread. Spread ice cream over crumbs. Pour remaining caramel over ice cream, then sprinkle on the rest of crumbs. Refreeze.

Note: this is a messy dessert to make but oh so yummy.
