Ingredients:
1 1/2 lb boneless, cubed chicken (can also use drumsticks or thighs)
2 tbsp sesame oil (or olive oil)
2 cups green or red peppers, cut into strips
2 tbsp cornstarch
1/2 cup soya sauce
2 cans chunk pineapple
6 tbsp white vinegar
6 tbsp brown sugar
1 tsp ground ginger
1 tsp garlic powder
Method:
Cook and stir chicken in hot oil in large frying pan until cooked through. Add peppers; cook and stir 1-2 minutes. Mix remaining ingredients and add. Bring to a full boil, stirring until thickened.
Serve over rice with broccoli.
